Analysis of Lipid Oxidation of Soybean Oil using the Portable Electronic Nose

Abstract
A portable electronic nose with six metal oxide sensors was used for the analysis of lipid oxidation. Soybean oil with various concentrations with CuSO©þwas heated at 200¡É and optimum condition for the analysis of the soybean oil by the portable electronic nose was obtained. Degree of lipid oxidation was described by the sensitivities (R_(gas)/R_(air)) of sensors. Comparison with the obtained results from the electronic nose, acid value, peroxide value and iodine value were determined to analyze lipid oxidation. Principal component analysis (PCA) was carried out using the data obtained from six metal oxide sensors. The first principal component correlated with the degree of lipid oxidation. As heating time increased, the PCA plot extended from the right side (positive value of the first principal component) through the middle to the left side (negative value of that).
